Hazelnut Berry Praline

During 2022’s Game and Forest season, the noma Test Kitchen developed a praline using the sediment leftover from stone-milling pumpkin seeds. The addition of spruce and parsley oils somehow played extremely well with the nuttiness of the toasted seeds, giving what would normally be a cloying confection balance. This experiment led to our first-ever sweet release: Pumpkin Seed Praline. The Hazelnut-Berry version might be even better. Featuring hazelnuts, raspberries, blueberries, and blackcurrants, it’s bright, acidic, and unlike any nut spread we’ve ever tried. The unique hints of saffron and licorice keep you coming back for more. Try it on toast, morning porridge, cheesecake, pancakes, and ice cream. Layer it into pastries of all kinds. You can even mix it with hot water and milk to create a special latte. Please refrigerate and stir well between uses.
